Xana’s “Intense” Chocolate Mousse

Xana’s Intense Chocolate Mousse
- 4 spoonfuls of sugar
- 100 grs (1 bar) of Cemoi “Intense” dark chocolate (you find them at Costco, where else)
- 80 grs of margarine
- 4 eggs
Cut the chocolate in small bits and melt with the margarine in low heat.
In a mixing bowl, beat the sugar with the egg yolks until they’ve doubled size.
Separately, bring your egg whites to “castle” point.
Add the chocolate mix to the sugar/egg yolk mix and very gently, fold in the egg whites.
Let stand in the fridge for at least 4 hours.
